Blanched Tenderstem® broccoli with a cranberry and maple butter and toasted almonds

Full of festive flavour and a great accompaniment to roast chicken or turkey, this recipe is a great addition to the Christmas table. Special occasions call for special ingredients, and Tenderstem® broccoli is the hero ingredient that makes this side dish sparkle.

Method

  1. Bring a saucepan of water to a rolling boil (large bubbles with the water boiling continuously).

  2. Meanwhile, melt the butter in a frying pan over a medium low heat, add the dried cranberries and maple syrup, turn down the heat and let the sweet flavours muddle together.

  3. Blanche the Tenderstem® broccoli in the boiling water for 3-4 minutes until tender. Drain the Tenderstem® broccoli then add it to the frying pan with the flavoured butter. Mix well then leave to one side and keep warm.

  4. In a dry frying pan over a medium high heat, toast the almonds for 3-4 minutes until golden brown.

  5. Scatter the almonds on top of the sweet buttery Tenderstem® broccoli and serve.
