Tenderstem® broccoli with charred lemon and parmesan

Swap bore-occoli for the lush, luxurious and leggy Tenderstem® to create this simple side dish that will make your Sunday roast better in just a few steps. The citrus notes combined with punchy parmesan and slightly nutty Tenderstem® broccoli work perfectly with roast chicken for a classic Sunday lunch.

  1. Bring a saucepan of water to the boil.

  2. In a frying pan over a medium heat, fry the lemon slices with a drizzle of olive oil. Caramelise gently for 3-4 minutes each side. If they are charring too quickly, just turn down the heat slightly.

  3. In the boiling water, blanche the Tenderstem® broccoli for 3-4 minutes until tender. Drain, then add the Tenderstem® broccoli to the lemon slices in the frying pan. Add the thyme leaves and sauté for 1-2 minutes.

  4. Garnish with black pepper and grated parmesan and serve.
